I've been washing clothes, making cauliflower carrot soup ( it doesn't look as yummy as it is)

and making bears.

Cauliflower and Carrot Soup ( makes about 4 cups)
500 gram Cauliflower
4 cups of vegetable stock ( or water with 2 stock cubes
75 gram carrot
50 gram leek
1 tsp fresh thyme
1 bay leaf
fresh parsley to garnish
Salt to taste
Boil vegie stock to boil in a large saucepan. Coarsely chop vegetables and add to broth.
Chuck in bay leaf and thyme. Add a dash of salt and let cook for 12 to 15 mins or until vegies are soft.
Set aside for a bit to cool down. 1/2 or so
Whack soup in blender and blend until smooth.
Heat gently over a low medium heat and add extra stock/water if desired to thin a bit.
Serve up . Yum.
You might like to sprinkle with a bit of Parmesan cheese, add a bit of yoghurt if you like too.

Wish I'd been by earlier because there's a bordering on desperate cauliflower in the fridge and I never know what to do with the stuff. Anyway, I may have been a bit busy snoozing...!
What a yummy looking soup ... and bear. (I do mean yummy in the figurative sense for the teddy ... they are better to cuddle than eat!)
yum - thanks for the recipe! (and another peek at another sweet bear!)
It has been the perfect weekend for curling up indoors. We've been doing the same.
Was lovely to see you at Pip's launch.
Your soup sounds yum, just what I needed with a cauliflower in the fridge begging for something different other than steamed or baked. Thanks
Gorgeous bear too
Lee:)
